Chocolate Chip Cookies

OK, so I’m not ready to talk about the baby shower cookies yet.  But, I have been feeling a little . . . I guess insecure is the right word.  So, I decided to post some chocolate chip cookies that I made recently.  Now, I recognize that chocolate chip cookies aren’t rocket science, but when they come out right, they are just perfect.

The recipe we used was from Isa Chandra Moskowitz and Terry Hope Romero’s book, Vegan Cookies Invade Your Cookie Jar. They don’t require anything special, like tofu, egg replacer, or apple sauce.  We really appreciate that, since we often don’t  [read: never] plan our baking projects even a half an hour before we start.   And while we have a very well stocked baking supply pantry, there is nothing worse than getting 3/4 of the way through assembling your ingredients for a recipe and finding out that you don’t have a box of vacuum-packed silken tofu.  So we really appreciate recipes that don’t require much more than the basics (like flour, sugar, oil, vanilla, soda, salt).

Chocolate Chip Cookies

Of course, it can be the easiest recipe in the world, but if it doesn’t taste good there’s no point in making it.  I am a firm believer in only making desserts that taste good.  Now, that seems sort of obvious, but I know a whole lot of people who only make things that are easy and fast.  And, while you might enjoy the taste of a cake mix, I think it’s so worth the extra time and effort to make something wonderful from scratch.

So, how did these taste?  Well, we ate over half the cookies in one night, if that tells you anything.  Actually, if you know us at all, that probably doesn’t tell you much.  We will, sadly, eat over half a batch of anything we make in one sitting.  But, these were especially good:  Crispy on the edges, soft in the middle, and all melty with chocolate chips.  Yum.

Unfortunately, I don’t have the recipe in front of me right this minute, but I will absolutely post it tomorrow.  These are perfect, non-fussy cookies that would be great for you non-vegans to try out.  So I’ll see you tomorrow, with a chocolate chip cookie recipe!
